| Strawberry Banana Multigrain Muffins
2 eggs 1/2 cup unsweetened applesauce 1/4 cup vegetable oil 3/4 cup packed brown sugar 1 teaspoon vanilla extract 3 bananas, mashed 1 cup mashed strawberries 1 cup whole wheat flour 1/2 cup oatmeal 1/4 cup ground flax 1/4 cup wheat germ 1 teaspoon baking soda 1 tbsp cinnamon 1/2 tsp nutmeg 1 tsp allspice
DIRECTIONS Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin cups, or line with paper liners.
In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and fruit.
Combine the flour, baking soda and cinnamon; Stir into the fruit mixture until moistened.
Spoon batter into muffin cups until completely filled.
Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.
Blueberry-Maple Muffins
1/3 cup flax 1 cup whole-wheat flour 3/4 cup oatmeal 1 1/2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 2 large eggs 1/2 cup pure maple syrup 1 cup vanilla yogurt 1/4 cup canola oil 2 teaspoons freshly grated orange zest 1 tablespoon orange juice 1 tablepoon vanilla extract 1 1/2 cups fresh blueberries
1. Preheat oven to 400°F. Coat 12 muffin cups with cooking spray. 2. Add whole-wheat flour, oatmeal, baking powder, cinnamon, baking soda and salt to a large bowl; blend. Whisk eggs and maple syrup in a medium bowl until smooth. Add yogurt, oil, orange zest, orange juice and vanilla; whisk until blended. 3. Make a well in the dry ingredients and stir in the wet ingredients with a rubber spatula just until moistened. Fold in blueberries. Scoop the batter into the prepared muffin cups. 4. Bake the muffins until the tops are golden brown and spring back when touched lightly, 15 to 25 minutes. Let cool in the pan for 5 minutes. Loosen edges and turn muffins out onto a wire rack to cool slightly.
I sometimes like to chop up a fresh peach and throw that in there too, very yummy.
Pumpkin muffins
Ingredients
2 cups pumpkin puree 1/2 cup packed brown sugar 1/4 cup canola oil 1/4 cup water 1/2 applesauce 4 eggs 2 cups whole wheat flour 1 cup oatmeal 4 teaspoons baking powder 2 teaspoons cinnamon 1 teaspoon allspice 1/2 teaspoon nutmeg 1/2 teaspoon ginger 1/2 teaspoon cloves 1 teaspoon salt 1 cup raisins 1 diced apple
Directions
1 heat oven to 375*F. 2 Grease and flour muffin tins, or use paper liners. 3 in large mixing bowl, mix together all ingredients except fruit, blend until just combined. 4 Do not over mix. 5 Stir in fruit. 6 Fill prepared muffin tins three fourths full. 7 Bake for 18 to20 minutes, or until muffins test done. 8 Cool in pan or on a wire rack.
Apple Cheddar muffins
Ingredients
2 cups whole wheat flour 1/3 cup brown sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon cinnamon 1 cup sharp cheddar cheese, grated or cubed (I like cubed) 1/3 cup parmesan cheese, grated 1 egg 1 cup vanilla yogurt 1/4 cup oil 1 medium tart apple, finely chopped 1/4 cup grated cheddar cheese (optional)
Directions
1 Preheat oven to 400F. 2 Grease muffin pans. 3 COMBINE flour, sugar, baking powder, baking soda, salt, cinnamon and cheeses in large mixing bowl. 4 BEAT egg, yogurt, oil and apple together thoroughly. 5 ADD liquid ingredients all at once to dry ingredients. 6 Stir just until moistened. 7 FILL greased muffin cups 3/4 full. 8 SPRINKLE tops with 1/4 cup cheddar cheese if desired. 9 BAKE at 400°F for 18-23 minutes or until top springs back when lightly touched.
Banana Zucchini muffins
Ingredients
1 cup zucchini, grated (I leave the skins on and use the food processor) 1 1/2 cups bananas, mashed (about 3 bananas, I leave it a little lumpy) 1/3 cup brown sugar 1 egg 1/2 cup unsweetened applesauce 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 1/2 cups whole wheat flour 1 cup quick-cooking oatmeal 1/2 cup walnuts, chopped or raisins (I rarely add anything to these muffins, I like them plain) 1/2 teaspoon salt
Directions
1 Oven at 350°F. 2 Spray muffin tin with non-stick cooking spray. 3 Mix banana and zucchini. Add brown sugar, egg and applesauce. Combine well. 4 In a seperate bowl, combine flour, baking soda, baking powder, oatmeal, salt and walnuts. 5 Add dry ingredients to wet ingredients, stirring until just combined. 6 Bake 25-30 minutes, or until a toothpick comes out clean. 7 Let rest for 5 minutes, and then cool on rack.
I usually add a bunch of spices and vanilla to this recipe too.
Tropical muffins
1 can crushed pineapple 2 mashed bananas 1 cup mango peach yogurt 2 eggs 1/4 cup oil 1/4 cup maple syrup 1/4 cup coconut 4 tsp baking powder 1 cup WW flour 1/2 cup oatmeal 1/4 cup flax 1/4 cup wheat germ
mix and bake in the usual way | |

I just wanted to add them here while I was sitting down to nurse Patrick and thinking about it. I'll post a review in a bit Morning Glory Muffins 1 cup all-purpose flour 1/3 cup whole wheat flour 1/3 cup rolled oats 1/3 cup wheat germ 1/3 cup white sugar 1/3 cup brown sugar 2 teaspoons baking soda 1 tablespoon pumpkin spice 2 cups shredded carrots 1/2 cup raisins (I used craisins) 1/2 cup chopped walnuts (I skipped these) 1/2 cup unsweetened flaked coconut 1 apple - peeled, cored and shredded (I left the peel on and diced) 3 eggs 1 banana mashed in a measuring cup oil to top up the banana to 1 cup 2 teaspoons vanilla extract Directions 1.Preheat oven to 350 degrees (I always bake my muffins at 375 convect) F (175 degrees C). Grease 12 muffin cups (I made 12 regular and 24 mini out of 1 batch, maybe they meant 12 jumbo?), or line with paper muffin liners. 2.In a large bowl, mix together flours, sugars, baking soda and spice. Stir in the carrot, raisins, nuts, coconut, and apple. 3.In a separate bowl, beat together eggs, oil/banana mixture, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups. 4.Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
